Ingredients (सामग्री)
[00:44] 1 bowl White Sesame Seeds (Til)
[01:41] 3 tbsp Whole Sesame Seeds (set aside)
[02:10] 1 small bowl Desiccated Coconut
[02:34] 50g Cashews (Kaju)
[02:34] 50g Almonds (Badam)
[03:25] 1/2 tsp Cardamom Powder (Elaichi)
[03:31] 1 tbsp Desi Ghee
[04:10] 1 bowl Rock Sugar (Mishri) (or regular sugar)
[04:32] 1 bowl Water
[06:46] Ghee (for greasing)
👩🍳 Method
[01:03] Dry roast the sesame seeds on low flame until they puff up slightly.
[01:25] Remove the roasted seeds to a plate and let them cool.
[01:41] Take out 3 tbsp of whole roasted seeds and set aside.
[01:41] Add the remaining cooled seeds to a grinder.
[01:57] Grind the seeds coarsely on pulse mode.
[02:04] Transfer the ground sesame to a large bowl.
[02:10] Add desiccated coconut to the bowl.
[02:40] Grind the cashews and almonds to a coarse powder.
[02:45] Add the nut powder to the sesame-coconut mixture.
[03:25] Add cardamom powder and mix all dry ingredients well.
[03:31] Heat 1 tbsp of ghee in a pan.
[03:43] Add the entire dry mixture to the pan and roast on low-medium flame for 1–1.5 minutes.
[04:03] Turn off the gas and let the mixture cool slightly.
[04:10] In another pan, add rock sugar (mishri) and water.
[04:32] Cook on medium flame until the sugar dissolves completely.
[04:53] Continue cooking for 2–3 minutes until the syrup reaches a sticky, one-string consistency.
[05:21] Turn off the gas for the syrup.
[05:26] Turn on low flame for the sesame mixture.
[05:32] Gradually pour the hot syrup into the sesame mixture, stirring continuously.
[05:51] Cook on low-medium flame until the mixture starts to leave the sides of the pan.
[06:02] Add the reserved whole sesame seeds and mix well.
[06:22] Check readiness by rolling a small portion into a ball; if it doesn’t stick, it’s done.
[06:34] Turn off the gas.
[06:46] Grease a thali or tray with ghee.
[06:50] Transfer the mixture to the greased tray and level it evenly.
[07:05] Let it set for 30 minutes.
[07:10] Once set, cut the barfi into pieces and serve.
