a community butcher is very underrated…in the USA most communities don't have them anymore, and most grocery stores don't train or pay a 'skilled laborer wage' for a trained butcher to be on sight.
Pity about those marvellous cuts… they deserved better. And I care even less about what they call "pasta". Ragu is not a mix of powders with water, not in a million years. Our long departed but no less loved poodle dog knew better about "pasta".
Amazing, but I like my Steak well done.
