πŸ“ Ingredients:
For Marination:

Chicken – 500 g (bone-in preferred)

Curd (thick yogurt) – Β½ cup

Ginger-garlic paste – 1 tbsp

Red chili powder – 1 tsp

Turmeric powder – Β½ tsp

Coriander powder – 1 tsp

Garam masala – Β½ tsp

Lemon juice – 1 tsp

Salt – to taste

For Gravy:

Oil – 3 tbsp

Butter – 1 tbsp

Onion – 2 large (finely chopped)

Tomato – 2 medium (pureed)

Ginger-garlic paste – 1 tsp

Green chili – 2 (slit)

Kashmiri red chili powder – 1 tsp (for color)

Coriander powder – 1 tsp

Cumin powder – Β½ tsp

Black pepper powder – Β½ tsp

Garam masala – Β½ tsp

Kasuri methi (crushed) – 1 tsp

Fresh cream – 2 tbsp

Salt – as needed

Fresh coriander leaves – for garnish

For Smoky Flavor (Angara Effect):

A small piece of charcoal

Β½ tsp ghee or butter

πŸ”ͺ Method:
1. Marinate the Chicken:

Mix chicken with curd, ginger-garlic paste, chili powder, turmeric, coriander powder, garam masala, lemon juice, and salt.

Marinate for at least 1 hour (overnight for best results).

2. Cook the Chicken:

Heat oil in a pan, add marinated chicken, and cook on medium-high flame till it turns golden brown and partially cooked (70–80%).

Remove and keep aside.

3. Prepare the Gravy:

In the same pan, add butter + oil.

Add chopped onions and sautΓ© till golden brown.

Add ginger-garlic paste and green chilies; cook till raw smell goes.

Add tomato puree and cook till oil separates.

Add chili powder, coriander powder, cumin powder, pepper powder, salt, and garam masala.

Mix well and cook for 2–3 minutes.

Add the cooked chicken pieces, little water, and let it simmer until chicken is fully cooked and gravy thickens.

Add crushed kasuri methi and fresh cream. Mix well.

4. Smoky Angara Effect:

Heat a small piece of charcoal till red hot.

Place a steel/katori bowl inside the curry.

Put the hot charcoal in it, pour Β½ tsp ghee/butter, and immediately cover the pan with a tight lid.

Let it smoke for 2–3 minutes, then remove the bowl.

5. Garnish & Serve:

Garnish with fresh coriander and a swirl of cream.

Serve hot with butter naan, tandoori roti, or jeera rice.
