I love a good Sheppard’s pie with sweet potato over it. I make mini freezer meals for my lunches it’s so much more affordable. I sometimes add frozen spinach to chicken enchiladas and green in stead of red sauce and white cheese like Monterey Jack. Your kitchen is so efficient. The work area is all in close proximity to all the right things. Staub makes the best pots. I just got a new 8.5 inch skillet for our 2 person household. Great job super mom. ❤

Never ever use flour tortillas for enchiladas….mexicans never use flour tortillas ever…they just turn to glue…always use corn…it’s so much better….yeah I know she isn’t Mexican but at least use the right stuff….
