🍅 The first recipe is Eggs in Purgatory, a rich tomato base with perfectly cooked eggs. Steve walks through each step and admits he has never eaten this dish on a plate. He always eats it straight from the pan.
🥚Next up is Steve’s famous omelet, made his way. He reminds viewers this is not a traditional omelet. He likes his a little brown, cooked in plenty of butter, and full of flavour.
🥪 To finish, Steve builds a giant club sandwich, layered high and filled with all the classics. When he finally takes a bite, he laughs at how big it turned out.

I'm with you for not wanting super runny yolks on a sammich. Whenever I make a sammich that has eggs I just cook them over medium or break the yolks and cook'em till they're jammy. The one exception would be to cook the eggs over easy or sunny side and then mash them with a fork, making an egg salad, before applying the mash to the sammich.
Good stuff! Have you considered strapping a gopro on and maybe showing us a bit of busy in service kinda like the Fallow guys do?

Eggs for dinner usually involves Ramen. Like 4 ingredients some extra seasoning, fast, and almost no clean up afterwards.
