Adding a great time saver here. When I buy a bag of potatoes, I make a large batch of mashed potatoes. Once they’re cooled, I use a self-made piping bag, Ziploc bag with a hole in it, and I squeeze out blobs that kinda look like gnocchi only bigger onto cookie sheets. I put those sheets in the freezer for a couple of hours and I go back and I take all those pieces and put them into freezer bags. Super easy to take out just the amount you need if you’re feeding only one or two people or decide to make a whole shepherds pie, etc. keep well in the freezer and I absolutely will never go back to single serving mashed. When you warm them up, they will seem a bit liquidy but as soon as you stir them, they’re perfect.
I made her "swamp potatoes" with Conecuh sausage…oh my…it was unbelievably good!!!
