I still have my mother’s old first edition cookbooks from Betty Crocker and Better Homes and Gardens both stuffed full with hand written scraps of paper of family recipes (from Germany on my mom’s side and Appalachia on my father’s). Sadly, I have no children to pass these on to so the legacy ends with me but those recipes were so economical and delicious. I am 63 and have so many fond memories of making some of them alongside my mother…especially at Christmas.
Gawds, liver and onions (vomit). I grew up poor so we had that fairly often as well as chipped beef with flour gravy on toast. I will never ever eat either those those again unless I am about to starve, lol. But, my parents did what they needed to in order to keep us kids fed.

I still make tuna noodle casserole, however, I use a basic béchamel or a modified velouté (béchamel made with half mushroom stock and half milk) instead of the mushroom soup, I also add onions and carrots as well as peas. My family loves it and it’s a bit of nostalgia for me!

I grew up in a family of 8 kids, only Dad worked so we were creative with meals. Sun pot roast was Mon hot beef sandwiches, then Tues stew with veggies and dumplings. Friends were farmers so they bought a whole pig or half a cow cut up. Packaged and ready for the freezer.
