True that a honing rod doesn’t sharpen a knife, but it’s still a very important and useful tool for edge retention.
Chef here. This is like explaining how to make a steak by saying "put oil in pan and heat steak in oil till sharp"… it's missing vital info. Like making a burr on both sides to confirm an apex, and deburring the knife for max sharpness
You can just blindly rub the knife on the stone with okay technique and it may or may not get sharp. It will artificially make some people think they know how to sharpen a knife. If it's taking you 30 minutes or an hour you don't know what you're doing. When I started out I would sharpen 30 minutes and eventually get a sharp edge but I was just a neanderthal with a whetstone
Honing rods make knives sharp. I get it that they are primarily straightening an edge, but I still think it’s correct to say they sharpen knives. Stones grind material off the blade and therefore re-form a cutting edge (bevel). So I would say honing and stropping sharpen a knife by straightening an edge, stones sharpen a knife by grinding a new edge.
