I make this as you do but use mixed beans as well as the chick peas, love it.
I do like coconut oil, however, mustard seed oil adds a completely new dimension to the dish. mind you, whatever you like is what you like.
Lemon or lime juice just cuts through the oily sweet taste and flavours, gives a balanced taste.
My daughter makes a fantastic chickpea and chorizo soup, but it doesn’t have potatoes. I am going to try your variation as well as the others, which all look amazing.
It definitely high protein, but also high carbs meals. Sounds yummy. Good food for someone who can afford to eat so much carbs.

I love Sri Lankan curries but I think you are missing a trick here with the curry powder. There's a Sri Lankan lady on YouTube with an authentic curry powder recipe which is a little bit different from most. In addition to the ingredients in yours there are green and brown cardamoms and toasted basmati rice. It gives the curry a fantastic depth of flavour. If you want to try it look for "The Flavor Bender" and click on her Sri Lankan curry powder mix. You won't regret it.
