Ingredients

For Cutlet Papdi:

– Paneer (Cottage Cheese) – 200g (crumbled or grated)
– Butter – 1 tbsp (for cooking)
– Onion – 1 small (chopped)
– Ginger – 1 tsp (chopped)
– Garlic – 1 tsp (chopped)
– Green Chili – 1 tsp (chopped)
– Kasuri Methi – ½ tsp
– Psyllium Husk (Isabgol) – 1 tbsp
– Salt – to taste
– Red Chili Powder – 1 tsp
– Turmeric Powder – ½ tsp
– Cumin Powder – 1 tsp
– Coriander Powder – 1 tsp
– Chaat Masala – 1 tsp
– Fresh Coriander – chopped
– Desi Ghee / Butter – for frying

For Chaat Dressing:

– Curd (Dahi) – 3 tbsp
– Stevia – to taste (for sweetness)
– Mint Chutney – 1 tbsp
– Tamarind Chutney – 1 tbsp
– Chopped Onion, Tomato, Cucumber – for topping
– Chaat Masala, Chili Powder, Cumin Powder – for garnish

Step-by-Step Recipe

1. Prepare the Base
– Heat butter in a clay pot or cast iron pan.
– Add ginger, garlic, green chili, and onions.
– Sauté till golden and fragrant.

2. Add Spices
– Add salt, red chili, turmeric, cumin, and coriander powder.
– Mix well for 30 seconds.

3. Add Paneer
– Crumble paneer and add it to the pan.
– Cook until the moisture evaporates.
– Add kasuri methi and mix well.

4. Form the Cutlet Papdi
– Let it cool slightly. Add psyllium husk, coriander, and chaat masala.
– Mix well and form small, flat papdis (not too thick).

5. Fry Until Crisp
– Rub onion on the tawa with ghee to make it non-stick.
– Shallow fry papdis on low flame until crisp and golden.

6. Prepare Sweet Dahi
– Mix curd with stevia to make naturally sweetened yogurt.

7. Assemble the Chaat
– Place papdis on a plate.
– Add a spoonful of sweet dahi.
– Top with mint chutney, tamarind chutney, chopped veggies, chaat masala, and chili powder.

8. Serve & Enjoy
– Garnish with coriander and a sprinkle of roasted cumin powder.
