Besan Pyaz ka Paratha is a stuffed paratha which has a stuffing of roasted besan, onions and spices.
In winter, when metabolism naturally slows down a bit, the slow-digesting carbs and protein in besan provide steady energy, hence making the Besan Pyaz ka Paratha an ideal breakfast option.

Recipe:
Besan Pyaz ka Paratha
Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 3-4
Ingredients:
For the dough:
2 cups atta
1 tbsp oil
½ tsp salt
Water to knead
For the stuffing:
4 onions
1 tsp salt
1 cup besan
1 tbsp chopped ginger
1 tbsp chopped green chillies
2 tbsp chopped coriander leaves
½ tsp cumin seeds
½ tsp crushed coriander seeds
¼ tsp crushed carom seeds
1 tbsp red chili powder
½ tsp garam masala powder
1 tbsp dry mango powder
Salt to taste
Ghee or oil to cook parathas
Method.
Add salt, oil to the flour and add sufficient water to knead to a very soft dough.
Rest the dough for 15 minutes.
Meanwhile fine chop the onions. Add 1 tsp salt and mix well. Allow to rest for 10 minutes. Squeeze out all the water from the onions.
Heat 1 tbsp oil in a pan. add the crushed spiced and allow to turn fragrant.
Add the chopped chilies and ginger and saute till fragrant.
Add the besan and roast the besan till it is golden and fragrant.
Now remove from fire, add the powdered spices and onions, salt to taste and mix well.
Kneads the dough again for a minute.
Break the dough into lemon sized balls. Flatten and stuff with 2 tbsp stuffinng.
Seal the balls and roll out the paratha. Cook the paratha on a medium hot tawa and serve with chutney, achar, butter or yoghurt.

❤❤❤❤ जय श्री राधे राधे पंकज भदौरिया जी हमने जब भी बेसन के पराठे बनाई हैं तो भुने हुए चने जो बिना छिलके वाले होते हैं उनको मिक्सी में पीसकर अजवाइन को घी में फ्राई करके हरी मिर्च धनिया अदरक मिर्ची लाल पीसी डालकर और फिर उसे पराठे में भरते हैं और कड़वे तेल में सकते हैं रिफाइंड या घी में नहीं क्योंकि चने का जोड़ जो है कड़वे तेल के साथ में बहुत अच्छा लगता है हम लोग इसमें लहसुन बड़ी काट कर डालते हैं कच्चा लहसुन जय श्री राधे राधे जय पिता जी की पंकज जी❤❤❤❤❤
