▶ This is how Koreans prepare kimchi for the whole year, all at once — a traditional process called Kimjang. We salt the napa cabbage for about 10 hours, make the broth and seasoning, and coat every layer by hand. Kimchi is not just food in Korea — it’s a yearly family tradition and a way to prepare for winter.

▶Ingredients
40 large napa cabbages
100L water
13kg (28 pounds) coarse sea salt
5 cup soaked sweet rice

Kimchi seasoning ingredients:
Blended: 2 radishes, 3 pears, 4 onions
8 pounds (3.5kg) red pepper flakes (gochugaru)
4 bottles (2.8L) fish sauce
3 cups salted shrimp
4 cups minced garlic
¾ cup minced ginger
½ cup honey

Making Broth Ingredients:
3 liters of water
Half a radish
1 apple
8 dried mushrooms
1 onion
3 green onions
1 cup of dried anchovies
3 large pieces of kelp
