Boiling of water takes place at lower temperatures in hilly areas due to the atmospheric pressure.
Water boils at lower temperature because there's very little pressure to keep air molecules inside water, so less energy is needed for water to get rid of air inside it
At elevated altitudes, any cooking that involves boiling or steaming generally requires compensation for lower temperatures because the boiling point of water is lower at higher altitudes due to the decreased atmospheric pressure
