Maryland Crab Cakes

Maryland crab cakes, cooked by a Brit Takes 25 minutes, makes 6 crab cakes plus extra mayo INGREDIENTS 2 pots picked white crab meat (100g) 50g breadcrumbs A handful of parsley, chopped A small bottle of olive oil 3 eggs Worcestershire sauce Dijon mustard Dried dill Old Bay seasoning Salt and pepper Capers Gherkins A lemon METHOD 1. For the mayo, in a big bowl add an egg yolk, a spoonful of Dijon mustard and a spritz of lemon. Whisk to combine, then wrap a tea towel around the bowl to keep it steady. 2. Slowly pour in a steady stream of olive oil, whisking all the time. Take your time and the mixture will slowly start to thicken; if it splits add a splash of hot water and whisk like crazy! The egg yolk will take as much oil as you like, but Iโ€™d aim for roughly 3. Add a squeeze of lemon, along with a pinch of salt and pepper. Taste and adjust the seasoning. Set aside. 4. For the crab cakes, in a bowl add the crab, 2 tablespoons of mayo, a teaspoon of Dijon mustard, a shake of Worcestershire sauce, Old Bay seasoning and a pinch of salt. Mix well, the fold through the breadcrumbs and parsley. 5. Shape into 6 patties and lay on a plate. Pop in the fridge for 30 minutes to firm up. 6. Fry quickly on each side for 2 minutes in a hot oiled pan. Drain while you make the tartare sauce. 7. In a small bowl combine 4 tablespoons of mayo with a splash of Worcestershire sauce, a pinch of parsley and dried dill, a tablespoon each of chopped gherkins and capers, and an extra dash of lemon. 8.   1. Chef Michael is probably very talented but as a Texan I didn't even have to taste that BBQ plate to tell you it wouldn't have flown here. They looked more baked than smoked and were the puniest ribs I've ever seen, they get them off a chicken?
