    Black Tahini Burnt Basque Cheesecake

    1kg Cream Cheese
    320 grams Sugar
    6 large Eggs
    30 grams Fresh Lemon Juice
    15 grams Vanilla Extract
    5 grams Sea Salt
    500 grams Heavy whipping cream
    30 grams All Purpose Flour
    150 grams black tahini

    Room temperature cream cheese mix with sugar. After well blend mix in the eggs one by one. Add the lemon juice, salt, vanilla extract, flour and black tahini and mix well. Then add the cream and fold in. Don’t Mix with blender. With spoon or spatula.
    Pour the well blend mixture into a 9 by 4 cake pan after placing the parchment paper.
    Preheat the oven to 450F. Bake until the top is burnt. Cool in room temperature for 2 hours. Then in the fridge overnight. Viola.
