Dahi Baingan Recipe I Eggplant Curry I दही बैंगन की सब्जी I Pankaj Bhadouria

Sharing today a Dahi Baingan Recipe that will me enjoyed by the entire family.
This Dahi Baingan Recipe is a personal favourite.
For the Dahi Baingan Recipe, we will use small eggplants and quarter them but you can also use round eggplants and cut them into thick slices for this eggplant curry.

Dahi Baingan
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 3-4

Ingredients:
250g baingan
3 tbsp mustard oil
1 tsp cumin
½ tsp mustard seeds
1 bay leaf
2 medium onion, finely chopped
1 tbsp minced ginger
1 tbsp minced green chili
1 tbsp besan
½ tsp turmeric
1 tsp kashmiri red chilli powder
1 tsp coriander powder
½ cup water
1 cup curd
Salt to taste
2 tbsp coriander leaves

Method:
Cut baingan into quarters. Apply salt and set aside for 5 minutes to sweat. In a pan heat 3 tbsp oil and fry the baingan. Remove.
Now to the same oil, and add cumin, bay leaf and mustard seeds. Allow to splutter.
Add minced ginger, green chillies and saute till fragrant. Add chopped onions and saute till lightly golden.
Add 1 tbsp besan and roast on low flame for 5 minutes.
Add turmeric, chilli powder, coriander powder and garam masala to the yoghurt and mix well. Add to the pan. Stir continuously till the curd combines well. Add fried brinjal and salt to taste.
Mix well, cover and simmer for 5 minutes.
Add 2 tbsp coriander leaves. mix well.
Finally, serve dahi baingain.

  4. Pankaj ji for dishes which require chopped ginger, always grate the peeled ginger on a cheese grater instead of chopping into pieces with a knife. That way the flavour of the ginger will be enhanced in the dish and the unwanted fibre left behind, better than getting chunks of ginger in the bite while eating.
