I usually make my pot roast in a regular pot, not an instant pot, so I don’t know how applicable this is, but if you way-up the ratio of potatoes to other stuff and liquid, a ton of starch gets into the broth and naturally thickens it without having to use corn starch. Plus… potatoes.
Also, a few dashes of Worcestershire go a long way.
