  1. All the places look like wonderful food- but none are Mexican probably due to sourcing ingredients and the consumers. 1st- there are many regional specialties in the SW US and Mexico. The UK will fit in Texas 3.5 times and Texas will fit into Mexico about the same- lot-o-space compared to UK. How is Mexican Lamb? Lamb isnt eaten in Mexico cabrito, goat is the norm. Tabsaco hot? Not so much. Lengua/tongue? The neighborhood taco place up the street in S. Texas serves it every day as well as chichrones (poke rinds) and not the way you had it. What they have in London is Mexican flavor base food but not the same. I have spent a fair amount of time in London and its better than it used to be. My Texan/UK daughter and grandkids can tell you in detail the difference and it always goes back to unavailable ingredients. They tank up when they are in Texas. Thank-YOU for doing this program!
