You said it yourself, history is written by the literate (be they munks or slave scribes) who are supported by the victors. Just because someone isn't literate themself doesn't mean they don't want their deeds recorded. So yes history is written by the victors, it is just written down by the literate.
Now yes here are histories written by and independent observer, but many historians are recording the view of their patron.
A story is true. A story is untrue. As time extends, it matters less and less. The stories we want to believe, those are the ones that survive, despite upheaval and transition and progress. Those are the stories that shape history. And then what does it matter if it was true when it was born? It’s found truth in its maturity. Which if a virtue in man, ought to be no less so for the things men create.
You are deliberately ignoring instances where we know both that the other side’s records were destroyed intentionally and times we know that official documentation is actively lying.
