We salt the napa cabbage for about 10 hours, make the broth and seasoning, and coat every layer by hand. Kimchi is not just food in Korea — it’s a yearly family tradition and a way to prepare for winter.

40 large napa cabbages
100L water
13kg (28 pounds) coarse sea salt
5 cup soaked sweet rice
Kimchi seasoning ingredients:
Blended: 2 radishes, 3 pears, 4 onions
8 pounds (3.5kg) red pepper flakes (gochugaru)
4 bottles (2.8L) fish sauce
3 cups salted shrimp
4 cups minced garlic
¾ cup minced ginger
½ cup honey
Making Broth Ingredients:
3 liters of water
Half a radish
1 apple
8 dried mushrooms
1 onion
3 green onions
1 cup of dried anchovies
3 large pieces of kelp

It would i guess make life easier if there is a ready made pack of kimchi sauce and just add on any veggies… To make instant kimchi.. hehehe
