What can i replace kombu with ? Its not available in India
im in a situation where I have the dried shitake, kombu and dried anchoives… but no katsuboshi. I wonder what It'll taste like if I mix what I have
Once prepared, dashi freezes perfectly for almost forever. I make mine with kombu, katsubushi flakes, SHITAKES. My broth is made with miren and soy sauce. Use it as a base for miso soup, or Japanese noodle soups (especially green tea noodles). Super simple, incredibly flavorful, this is NOT my mother's chicken soup!
