I made these 3 times already last year they turned out perfect. But today my pastry didn't rise properly and it was too watery. Do you know where I went wrong? Can the temperature of the kitchen also affect?

ok mine came out doughy in the middle- no hallow in the middle….CRIES…..but i dont have a hand mixer so i had to do this by hand….maybe this is where i went wrong…..maybe i didnt cool the mixture enough
