Something i watched my grandma do. Is cold broth you can add ice cubes to cool it add a few eggs add the broth cold it makes fluffy dressing..instead of that hot broth hittin that bread and it gums up sticky… adding cool broth makes fluffy dressing….
I make almost exactly like this , only difference is I add 1 or 3/4 can of evaporated milk idk my Mom did so I follow suite. It’s delicious!
The bag comparison convinced me!!! Fresh stale bread is my new go to. And at 72 years old and cooking for 55 years, you have changed my T Day stuffing recipe AND I loved the bag stuff – of course, ginned up my own flavor profile!!

This is a great recipe but its not stuffing…its dressing. I add Jimmy Dean sausage to mine..no eggs. Also..I use unsalted butter .
