Your cut biscuits are much more than 1 inch thick. Was that on purpose? What's the upper limit? Oh yeah, you do mention that was the cause for them to topple over.
My grandmother made the best biscuits using crisco. They were soft and not high. They were the perfect palm size, slightly small. Not to thick, not too thin. I Don't like biscuits. I'm used to hers.
