Hey, John. Yours is my favorite cooking channel by far. i've tried your biscuit recipes with good results.
Is it normal for butter to pool around the biscuits? I freeze the butter after shredding, so the butter and milk are very cold when mixing.
I looked up reasons and fixes, but still pooling. Last night I made a 1/2 batch of these whole milk biscuits. I froze the cut biscuits over night & cranked the oven up to 450F for 24 minutes to account for freezing. The parchment paper was soaked with butter, but the pooling was less than previous tries. The biscuits had a nice light crisp, so this temp seem to be better for my taste.
The only thing I can think is I'm over-working the dough, but I'm getting nice layers and the insides are flakey.

I did not pay attention at first that you were using your hands to cut in the butter I used a fork this is the second time I watched the video cuz I didn't know how much liquid to put in and I just realized you used your hands to do it maybe I'll try that next time it might have went faster than using a fork

I made it. Turned out great. Instead of tediously working the butter into the flour, I just cut it into small pieces with a knife before adding it to the flour. Then let the rolling pin do the rest of the work.
