I think it's quite rare to put seaweed and cheese together. In Japan, tamagoyaki made at home is usually made without any other ingredients. The only seasoning is sugar, or maybe soy sauce. I would just use cheese without seaweed. The combination of seaweed and mentaiko is often seen in Hakata.
