He did not say it correctly. He explained that you can make it like them, but not as fast as them. When they make it at their place, they always make the dough difficult for people. There are easier and faster ways than what they explain and they work with them, but they always teach people the old ways that take the most time. That is why I challenge them to make pizza in their restaurants as he explained to us!!

Thanks for sharing… However, no flour is worth $33.00 for 2.2 lbs… That makes about 4 12" pizzas… I believe it's paying for his name… It can't be that much better than the Anna Napoletana Extra Fine Flour Unbleached…. I do want to try his recipe though…. Where I worked we didn't sell Neapolitan Pizza, just traditional… I like the fact that he uses his hands for the whole process instead of a mixer… A machine can't replicate natural human senses…. However, where I worked, the volume of dough we made every morning,made that impossible… We not only made the pizza out of it, but the Stromboli, Calzone, the bread for sandwiches, dipping, garlic bread and Italian doughnuts…
could we use yeast in packages (powder) and I wish you had the recipe for one or two pizza only.
Where do you find that kind of yeast in the US? Any particular grocery store?
I wish people learned this as a standard, I'm sick of seeing burned crust and people saying that "it's supposed to be like that". This pizza is amazing, simple and perfect.
For home cooks.. how many pizzas you need to make to have muscle memory on flipping dough balls? 😂
