  1. I worked in a a couple of mom and pop bagel shops on Long Island and NYC when I was a teenager in the early 90's. The Everything seasoning was just the bits that fell off of bagels in the display cases and swept into a jar at the end of the day. Waste not, want not.

  2. The Perfect Bagel and Lox sandwich:

    – homemade bagels: everything, sesame, plain, or pumpernickel
    – cream cheese
    – sundried tomato paste spread (instead of actual tomatoes, which are too hard to find good ones)
    – capers
    – a smattering of finely sliced scallions – for practicality it's easier to have them mixed into the cream cheese
    – generous layers of Norwegian sor Scottish smoked salmon.
