Can I ask why you didn’t use lye? The recipe in Texture Over Taste called for it, so I was curious. This was still super good, though, as all of your recipes are!

Hey Josh – I make lots of your recipes (esp love your challah) and I'm sure these bagels are v good- I'm just surprised not to see Barely Malt syrup either in the bagel (instead of the sugar) and/or in the kettling water.
