I recently learned about velveting the meat. Basically marinade but add some cornstarch to the marinade. It really makes the chicken much more juicy
Put your ginger in the freezer. No need to peel and grates MUCH easier and quicker because its no longer stringy when its frozen. Grate while frozen of course. So you will never NOT have fresh ginger.
