Ingredients For Making Reshmi Chicken – Serves 4 to 5
For Marinating the Chicken:
550g /1.2 lb boneless, skinless chicken thighs (or breast)
1 tsp finely grated ginger garlic paste
1 tsp lemon or lime juice
¼ tsp ground black pepper
½ tsp Kashmiri red chilli powder
3 tbsp Greek thick plain yogurt ( use 4 tbsp if using regular curd)
1 tsp salt
Whole Spices:
1 small petal of star anise (do not overuse)
4 green cardamoms
4 cloves
1 small cinnamon stick
For the Curry Base:
360 gm / 2 medium onion, roughly sliced
1 tbsp oil (for frying onions)
40 gm / 10 to 12 cashew nuts (soaked in hot water for 1 hour)
⅓ cup water (for blending)
For Cooking:
1 tbsp oil
1 heaped tbsp ghee (or just oil if preferred)
1 tsp finely grated ginger garlic paste
1 tsp Kashmiri chilli powder
1 tsp ground coriander (dhania)
½ tsp ground cumin (jeera)
½ tsp garam masala powder
1 tsp sugar (optional, to balance flavors)
Salt to taste
½ cup thick coconut milk (or cream if preferred)
½ cup hot water
Finishing Touches:
½ tsp kasoori methi (dried fenugreek leaves)
2 to 3 tbsp chopped fresh coriander leaves
2–3 whole green chillies (optional)
1 tsp ghee

Is this not the same as the korma recipe which was delicious?
Looks yummy. Do we need to separate the whole spices before putting the fried onion in the blender, or do they get blended easily?

Hi Bumbi, this is definitely going on my 'make' list. A question though: would I be correct in saying that with regards to the gravy, the only difference between this and your recent cauliflower korma is that the Reshmi recipe has more spices? – same coconut milk, same ground cashews.
