  1. Great ideas. I’ve never thought to make my own vegetable broth, I don’t know why? I guess because I’ve always used my scraps for chicken broth, which I have an abundance of right now. I’d love to have a few jars of vegetable broth. That’s actually what I use to brine our Thanksgiving turkey in. What seasoning do you throw in yours? I have 3 gallon baggies full of scraps in my freezer right now and would love to clear those out.

  2. We eat tacos a lot in our home. I add cactus that I grow to the hamburger, shredded beef or chicken along with onions. Once I add the lettuce, cheese and salsa it is about 2 tablespoons of meat even for my husband. When I add avocados it has even less meat. My husband even said how big the taco was not realizing how little meat I was actually using. I will also add rice and beans and then I'm using less than a tablespoon of meat. I make my own corn shells making it even a cheaper meal.
