Spatchcock turkey is a great way to prepare a turkey for the Holidays. Spatchcocking a turkey helps the turkey cook more evenly than a traditional turkey, it cooks quicker than an upright turkey since the breast is closer to the cooking grate and it presents beautifully on the table.

I've always used my drippings for gravy, but with this method, I need a substitute, any suggestions?

I will try this method of cooking the turkey this year, order a brine/seasoning combo. I spatchcock chickens when I cook on my grill. One reason is better flavor on the inside meat, harder to get smoke inside the cavity when cooking whole.
Smoked a turkey exactly how Matt shows in the video three times now and it’s by far the best turkey we’ve ever had. I just buy his stuff at Ace. They have a pretty great selection of his products.
I've always brined my store bought turkeys. I have never paid attention to see if they were pre-brined or not. I brine 24-48 hours and they always turn out super juicy. I still have issue getting the skin done at least bite through. I've tried all kinds of things but it still eludes me. Chicken give me no issue, but turkey does.
