about the cryo-steak…
that weird flavor is actually from two things; the process used to make dry ice and the contaminants in dry ice.
dry ice is "dirty". it's actually made that way so as people don't use it in foods and wind up in the hospital, or worse, dead.
i can tell you that back in 1991 i was working at USCD Medical in San Diego, a boy came in and had a ruptured stomach.
he and his friends stole dry ice from their high school's science lab and bought tequila, vodka and cough syrup.
they thought that they were going to get to another level of high.
he swallowed an unknown amount of dry ice and it went from solid to gas, sublimation, in his stomach.
he was in a coma for about a week after but to save his life, the doctors had to remove half of his stomach and portions of his small and large intestines. he could never eat regular foods and was fitted with a colostomy bag for the rest of his life.
liquid nitrogen is used because it keeps itself pure and truly has no scent or taste.
