Buffet (or any restaurant) quality can depend not just on location but when you are there – is there a competent manager, are the cooks and servers paced well, was the raw delivery on-time and of the quality it should be, was the food just put out on the buffet or has it been sitting there. Also is the buffet their main deal or an add-on to the restaurant that might not be prioritized?
Weirdly enough its Chinese buffets that have the best quality around where I live – meat cooked well, no lacking flavor (barring the desserts that are meant to be light flavor to contrast the heavy food), kind servers (other buffets seem hesitant to refill drinks or check on patrons).
Went to a Golden Corral once, it was in tourist area of Florida so it was probably given better attention. It was a decent experience, if a bit lacking in number of things I could eat ; just never order water, not there not anywhere in Florida.
What I'd give for a local dessert buffet.
