First of all, I love your recipes and your delivery, you are one of my inspirations for me to start up my cooking channel. I just need to decide which will be my first recipe to film, traditional or one of my original creations.
Now, on the brisket and bean chili: Not the sugar. I remember having it in beans, but my mom never gave it to us in chili. We were quickly weaned off "sugar so the kids eat it". I tried it out of nostalgia and I about got sick. I realy hate using sugar to sweeten otherwise savory. I tend to work the caramelization on the veggies. it is usually enough without adding sugar. If you are going to sweeten anyway, you might try a bit of natural maple syrup (not table syrup though. it is barely maple if at all), which will enhance the flavor profile while evening out the spice. agave is another one, and when I am feeling naughty, I cheat on the caramilization of the onions by adding a teaspoon of honey. In any case we need to reduce the rate of diabetes in our community, and kids nowadays be overweight on an adult level. When I was a kid it was a rare thing.
I remember my first time experimenting with cinamon in a chili when I was like 16. I followed a recipe, and well, the recipe was not good LOL. I do use it in cooking nowadays though. I learned my lesson, and learned how to use my taste buds.
