Hands does not have that exact accuracy of 15 degrees , you need a jig to do that

Some people say only scrap one direction i.e dont pull it back to you. Does it matter? Is saw motion like this video better?

what about a machete?
I use myself. I use a totally filled oil Stone. I used a fine grade Norton, and then I have an ultra find. If you already bought good, proper knives for the kitchen and chef, knives and such, they already got a good edge. All you need is define and alter fine stones that keep that razor sharpness. You don't need to core stones. You don't need the medium stones if you have good quality knives, that's only if you have junk knives, and you're going to work on tools and such things. That's going to use hard labor not for kitchen knives, and chef knives
