Recipe
Seeraga samba rice Rinsed- 1 & 1/2 cups
Wash and soak for 20 minutes
Green masala
Ginger – 1 inch piece
Garlic – 10 cloves
Green chilies – 4 to 5
Cashew nuts – 5
Coriander leaves and stems – handful
Grated Coconut – 1/4 cup
Garam masala – 1 heaped tsp
Water – 1/4 cup
Grind it into a smooth consistency
Hard boiled eggs – 5 (slit )
In a pan (on simmer)
Oil – 1 tsp
Turmeric powder – /4 tsp
Chili powder – 1/2 tsp
Salt – 1/2 tsp
Add the boiled eggs
Fry them till golden (keep them aside)
In a pot or cooker
Oil – 2 tbsp
Ghee – 1 tbsp
Whole spices
(Cloves – 4, Cinnamon – 1 stick, starannise – 1, Cardamom – 2, Fennel – 1 tsp, Bay leaves – 3 nos)
Fry them for few seconds
Green or red chilies – 4 (slit)
Onion – 1 medium sized
Fry till translucent
Kasoori methi – 1 tbsp
Mint leaves – handful
Tomatoes – 2 small sized
Salt to taste
Sauté for a min
Add the ground green masala
Along with 1/2 a cup of water
Cook till the oil separates
Water – 2 & 1/2 cups
Bring it to boil
Juice of half lemon or lime
Add the soaked rice (without the water)
Mix and cook till the 3/4th the liquid gets absorbed
Add the fried eggs
Some coriander leaves
Bring the heat to the simmer (lowest)
Cover and cook for 15 mins
Turn off the heat and let it sit for 10 mins before breaking the dum
Enjoy it with the pulao chutney and raitha 🤗
