No one can eat this much. Hopefully she shares her food with her boyfriend but even then it's a lot. And there is probably a lot of food waste which would be so sad as she is doing this as a job. I don't wanna think about all the animals that had to die just to be put in the trash.

First of all I am happy that you tried our street food and as an Indian, I am proud of it.
Secondly, I am seeing the comments here that why dosa with beef filling. Firstly, is she forcing you to eat beef? And secondly, is she in India where this dish was prepared? Have some common sense.
Having beef or no beef is your choice, nobody is telling you to eat. And I have seen some Hindus eat beef, take for example DCT eats, a YouTuber who eats beef and because of some narrow minded Indians where they will get offended easily, he’s mentioning “meat” because millions of us will get offended. It’s their choice to have beef or chicken or be vegan, nobody is forcing you to eat them or follow her.
If your sentiments are hurt, uninstall YouTube and touch grass.
