Along side being poor, I gained an allergy in 2020, well technically 3 but the main one is an onion allergy, all of my mental safe foods had some varying level of onion in it, whether it was just a tiny bit of powder or every part of the onion minus the actual onion itself or if it did I just wouldn't eat it because I didn't like the texture. But gaining this allergy has removed many foods from my premade roster such as common brand chicken noodle soup, hot pockets, some pizza brands, spaghetti sauces, pizza sauces, etc if you think of it chances are it has some form of onion in it. The toughest one was Rotisserie chicken, so even tho I am poor this genuinely makes me happy that I can still have hot pockets at home that can be made around my allergies. It's so rare to find recipes without onion in them so we just ignore that step.
This also goes for fast food like Burger King and McDonald's where I can no longer have their chicken sandwiches. There's only 2 fast food restaurants I can have them from and they're not international chains so yea
I think I'm on another lever of poor cuz I only have one of those little table stoves with 2 burners. No oven 😅 but I appreciate your recipes!! A lot of times I can make it work
I do something similar it‘s like a type of pierogis. I use a cheap bread baking mix (usually spelt) where you only have to add water and fill it with mashed potatos and fried onions.

I skipped the butter for a little less than the same amount of vegetable oil and it worked just fine.
