Explanation of 1st one:
When you put the blown-up balloon over the glass with the burning paper, the flame heats the air inside the glass, making it expand. As the air cools down quickly after the flame goes out or is smothered by the balloon, it contracts, creating a partial vacuum inside the glass.
The air pressure outside the glass is higher than inside, so the balloon gets sucked into the glass.
As for the balloon "flying," it's likely because the air rushing out of the balloon as it's being sucked in creates a bit of lift or movement.
