Island Cocktails Mai Tai:
Build in shaker
1.5 oz. or 45 ml. Spiced Rum
1.5 oz. or 45 ml. Coconut Rum
.75 oz or 22 ml. Triple Sec
.5 oz. or 15 ml. Dry Curaçao
.5 oz. or 15 ml. Lime Juice
1 oz. or 30 ml. Sour Mix*
.75 oz. or 22 ml. Orange Juice
Add ice and shake
Open pour into glass
Garnish with a Pineapple Chunk and Cherry

*Sour Mix:
1 part Lime Juice
1 part Lemon Juice
2 parts Simple Syrup

That’s-A-Mai-Tai:
Build in glass over cracked ice
1.5 oz. or 45 ml. Rum (Mount Gay Eclipse)
.75 oz. or 22 ml. Vodka (Stoli)
.75 oz. or 22 ml. Triple Sec
1.5 oz. or 45 ml. Pineapple Juice
Top with Sprite
Stir

Texas Mai Tai:
Build in shaker
3 oz. or 60 ml. Lime Vodka (Deep Eddy’s)
1 oz. or 30 ml. Orgeat
Add ice and shake
Open pour into glass
Top with Orange Gatorade

TRUE Mai Tai:
Build in shaker
.5 oz. or 15 ml. Lime Juice
.5 oz. or 15 ml. Orange Juice
.75 oz or 22 ml. Simple Syrup
1 oz. or 30 ml. Pineapple Juice
.75 oz or 22 ml. Amaretto Liqueur
2 oz. or 60 ml. Light Rum
Add ice and shake
Open pour into glass
Float of Dark Rum
Garnish with a Pineapple Chunk and Cherry

Under a Cowgirl Mai Tai:
Build in shaker
1 oz. or 30 ml. Pineapple Juice
1 oz. or 30 ml. Orange Juice
1 oz. or 30 ml. Grenadine
.75 oz. or 22 ml. Peach Schnapps
2 oz. or 60 ml. Rum
Add ice and shake
Open pour into glass

Red Place Mai Tai:
Build in shaker
2 oz. or 30 ml. Spice Rum
1 oz. or 30 ml. Coconut Rum
1 oz. or 30 ml. Orange Juice
1 oz. or 30 ml. Pineapple Juice
.5 oz. or 15 ml. Roses Grenadine
Add ice and shake
Open pour into glass

  2. Rum nerd here. Mt Gay Eclipse is "respectable" in that it isn't overpriced, has no sugar or other crap added, etc. It's not interesting, it's safe, etc. But it's also not expensive and they do nothing wrong, just nothing interesting in this one.. They make some other rums which are much better. I love Mt Gay Black Barrel for that border of sipping/mixing rums (which in Virginia is priced like a sipping rum) in the Bajan style.

  3. Ok, 2 things.

    1. LOL. The Ashton Kutcher reference. I was in boy scouts with Ashton Kutcher. He gets a lot of shit, but seriously, years of camping one weekend per month with him and all I can say is that he was a really good dude. Being rich changes people, but when I new him, nothing but good to say.
    2. The mai-tai dark rum float. I suspect this originiates from the making a mai-tai "the old way". Which from my understanding (I think from the Smuggler's Cove book, but it's been so long that I could be wrong), at one Trader Vic's an older customer would request a '44 mai-tai (or whatever they were serving, may have been one of the later "true" iterations) with a float of Lemon Hart 151 on top. This DoeS actually add something for me, even with a straw. I think that it's so strong and rich that what little gets pulled down from the straw still adds something. Of course today, what this probably means is that they have, at best, floated Appleton Signature and more likely Black Seal on top… if that.
