Mung Bean Tikki Chaat

Made this super yummy sprouted moong tikki chaat today — it turned out so good! 😋 Crispy from outside, soft inside, and that curd with chutneys just makes it next level. It’s healthy, protein-rich, and honestly feels like a guilt-free street food fix!

Ingredients for Tikki:
• 1 cup sprouted moong
• 1 carrot (roughly chopped)
• 2 green chillies
• 1-inch ginger
• A handful of coriander leaves
• 1 boiled potato
• 1 tbsp flaxseeds
• 1 tbsp sesame seeds
• ½ tsp turmeric powder
• 1½ tsp coriander powder
• 1 tsp Kashmiri chilli powder
• 1 tsp chaat masala
• Salt to taste

For Assembling:
• ½ cup curd (beaten with a pinch of salt & sugar)
• Sweet chutney & green chutney (as per taste)
• Finely chopped onion, cucumber & pomegranate
• A pinch of chaat masala
• Jeera sev or nylon sev for garnish

Method:
1. Add sprouted moong, carrot, green chillies, ginger, coriander leaves, and boiled potato to a blender. Pulse — don’t make it into a paste.
2. Transfer to a bowl, add flaxseeds, sesame seeds, turmeric, coriander powder, chilli powder, chaat masala, and salt. Mix well.
3. Shape into small tikkis and cook on a greased tawa until golden and crisp on both sides.
4. In a serving bowl, spread a layer of beaten curd.
5. Place 2 tikkis, drizzle both chutneys, add onion, cucumber, and pomegranate.
6. Sprinkle chaat masala and top with sev.
7. Serve right away — it’s healthy, tangy, and so satisfying! 💚

📝 Extra Tips:
• Add 1–2 tbsp besan or breadcrumbs for extra crispness.
• A pinch of roasted cumin powder or amchur makes it more chatpata.
• Mix a little mint chutney or black salt into the curd for that chaat-style taste.
• Lemon juice adds a nice freshness to the tikki.
• Top with microgreens, crushed papdi, or roasted peanuts for crunch & presentation.
