Ingredients:
Prepare Homemade Tajin Seasoning:
-Kashmiri lal mirch (Kashmiri red chillies) deseeded 3-4
-Lemon zest 1 & ½ tsp
-Tatri (Citric acid) 1-2 tsp
-Lemon powder ½ tbs
-Iodized Himalayan pink salt 1 tsp or to taste
Prepare Tajin Fajita Chicken:
-Cooking oil 1 tbs
-Boneless chicken strips 350g
-Lehsan powder (Garlic powder) ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Iodized Himalayan pink salt to taste
-Paprika powder ½ tsp
Prepare Sautéed Veggies:
-Cooking oil 1 tsp
-Lehsan (Garlic) finely chopped ½ tsp
-Shimla mirch (Capsicum) julienne 1 Cup
-Yellow bell pepper julienne 1 Cup
-Red bell pepper julienne 1 Cup
-Pyaz (Onion) julienne ½ Cup
Prepare Zesty Herbed Rice:
-Cooking oil 1 tbs
-Fresh parsley chopped 1-2 tbs
-Lemon zest ½ tsp
-Chawal (Rice) sella 2 Cups boiled with salt
-Kali mirch powder (Black pepper powder) ½ tsp
Prepare Sour cream:
-Cream ½ Cup
-Lemon juice 1 tbs
-Iodized Himalayan pink salt ¼ tsp or to taste
-Fresh parsley chopped 1 tsp
-Water 2-3 tbs
-Fresh parsley chopped
Assembling:
-Red kidney beans boiled
-Salsa
-Corn salad
Directions:
Prepare Homemade Tajin Seasoning:
-In frying pan,add kashmiri red chillies & dry roast for 1-2 minutes & set aside.
-Add lemon zest & toast on low flame until its dry & fragrant (1 minute) & set aside.
-In a spice mixer,add roasted kashmiri red chillies & lemon zest,citric acid,lemon powder,pink salt & grind well to make a powder.Homemade Tajin seasoning is ready!
Prepare Tajin Fajita Chicken:
-In frying pan,add cooking oil,chicken strips & mix well until it changes color.
-Add tajin seasoning (1 tbs),garlic powder,cumin powder,pink salt,paprika powder & mix well,cover & cook on low flame until done (6-8 minutes) then cook on high flame until it dries up & set aside.
Prepare Sautéed Veggies:
-In the same frying pan,add cooking oil,garlic & mix well.
-Add capsicum,yellow bell pepper,red bell pepper,onion,prepare tajin seasoning (1 tsp) & mix well on high flame for a minute & set aside.
Prepare Zesty Herbed Rice:
-In a wok,add cooking oil,fresh parsley,lemon zest & mix well.
-Add rice,black pepper powder,mix well & cook on high flame for 1-2 minutes.Zesty rice is ready!
Prepare Sour cream:
-In a bowl,add cream,lemon juice,pink salt & mix well.
-Add fresh parsley,water & mix well.Sour cream is ready!
Assembling:
-In a serving bowl,add zesty herbed rice,cooked tajin chicken,sautéed veggies,red kidney beans, salsa,corn salad, drizzle prepared sour cream,fresh parsley & serve!
-Traditionally guajillo & ancho chili powder is used (1 tbs of each),we are using Kashmiri red chillies as substitute ).
