    It is done because maize doesn't contain the necessary enzymes (Alpha & Beta Amylase) to convert long-chain, unfermentable starches into shorter-chain fermentable sugars.
    Our saliva contains such enzymes.
    The chewing introduces these enzymes, allowing for the formation of fermentable sugars.
