Recipe 1 : Zucchini Chana
A comforting sabzi with black chana and zucchini cooked in everyday Indian spices—flavourful and light!
Ingredients:
Boiled black chana – 2 cups
Zucchini – 1 medium, chopped
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
A pinch of heeng
Salt – to taste
Curry leaves – 10–12
Turmeric powder – 1 tsp
Red chilli powder – 1 tsp
Garam masala – 2 tsp
Coriander powder – 2 tbsp
Green chilli – 1, slit
Coriander – chopped, for garnish
Oil – 2 tbsp
Method:
Heat oil in a kadhai and temper with mustard seeds, cumin seeds, and heeng.
Add curry leaves and green chilli.
Add chopped zucchini and cook for 3–4 mins till slightly soft.
Add boiled chana, all the dry spices, and salt.
Mix well and cook covered for 6–7 mins on low heat till the zucchini is cooked.
Garnish with chopped coriander and serve!
