Rosemary Salt Recipe:
1 cup Kosher salt
14 sprigs of rosemary stripped
8 sprigs sage stripped
3-5 cloves of garlic (3 if they are big and 5 if small)
1 lemon zested

Rosemary salt weighted recipe:
250 g Kosher salt
16 g fresh rosemary leaves
8 g fresh sage leaves
20 g fresh garlic
3 g fresh lemon zest

Madras Curry Powder Recipe:
3 tbsp coriander seeds
3 tbsp cumin seeds
1 tbsp black mustard seeds
1 tbsp fennel seeds
2 tbsp black peppercorns
2 small pieces of cinnamon stick
2 tbsp fenugreek seeds
15 curry leaves
7 cardamon pods
2 star anise
1 tbsp turmeric powder
2 tbsp Kashmiri chili powder
2 tsp ginger powder
1 tbsp hot chili powder

Shoyu Chicken Recipe:
4-6 chicken thighs
1 1/2 cups water
1 cup soy sauce
1/4 cup dark brown sugar
1 tbsp rice vinegar
1 thumb-sized piece of ginger
5 garlic cloves
7 spring onions

  1. We just recently discovered your channel and bought your e-book.
    I made the crispy skinned boneless thighs (dry brined for 24 hours) and they turned out amazingly crispy and the pan sauce (I did take the time to roast the bones) was great!
    Looking forward to trying other recipes especially the 1 hour turkey for Christmas.

    I’ve been trying your deboned skin-on thigh recipe for about 6 months now and I finally NAILED IT! Never has there been crispier skin.

    BUT

    My girlfriend requires a full, well rounded meal (with veggies!)

    SO

    I paired it with your perfect red mashed taters (with your recommended ricer that I got for Christmas ;))
    and your perfect roasted broccoli (from the old years 😉 ;))
    It turned out (mostly) perfect!

    BUT!!

    I found the hardest part was time management in having a full, well rounded meal come together. The broc was a bit over-blanched, and it was tough to make sure everything came out hot.

    And that is coming from a paid short order cook. (Cooking for 1 or 2 can be a tough concept for many paid cooks who eat kraft dinner when they come home.)

    SO

    I would love it if you could make a video about TIME MANAGEMENT and how to make a whole, well rounded dinner come together in real time.

    I KNOW YOU KNOW WHAT I’M SAYING!

    And hopefully this comment is too long to ignore.

    You’ve inspired me to cook, and I’m proud of you, and your progression as a Youtuber!

    PS – the pan sauce saved the meal. I had never made stock before!

  3. Any chance you could give us some sound on this video because I'm about to make chicken thighs and I thought maybe I'd twist it up a little bit but however if I can't hear the cook talk about the seasonings he's using I'm kind of screwed
