Recipe by Want More Recipes (2 servings):
– 5 oz tuna (packed in oil)
– 2 large eggs
– 1 tsp salt
– 1/2 tsp pepper
– 1/2 tsp chili flakes
– 1/2 tsp fried garlic or garlic powder
– 1 tbsp butter
– 1 onion
– Mozzarella cheese
I modified with:
bio, sustainable light skipjack tuna packed in organic olive oil (drained)
pinch of salt
1 tsp olive oil
Handful of colorful bell peppers, chopped small
Handful of spinach leaves
1 tomato
Chives, chopped small
Sprinkle of Emmental cheese
Sriracha (always)
Method
1. Mix 2 eggs and the tuna together in a bowl
2. Add veggies, spices and herbs and combine
3. On medium-heat add oil or butter and then the onions. Saute for 2-3 minutes until just softened and slightly browned
4. Add the tuna egg mix and spread it out over the onions. Cover for 10 mins.
5. Cover the pan with a plate, flip, then slide the omelette back into the pan
6. Sprinkle cheese on top and then cover and cook for another 10 mins
7. Serve and enjoy!
